Broiled Parmesan Scallops

Ingredients:
- 1 pound fresh scallops
- 2 tbsp butter softened
- 1/4 Parmesan cheese
- salt and pepper to taste
- 1 tsp paprika
- 1 tsp garlic powder

Directions:
Preheat the oven to broil.  In a small bowl, combine the butter, Parmesan cheese, salt, pepper, paprika and garlic powder. Place each scallop on a baking dish and smear each scallop with the butter mixture.  Broil the scallops for 2-4 minutes on each side, spreading the butter mixture on top after each turn.

Shrimp Omelet

Ingredients:
- 12 small shrimpcooked,shelled and deveined
- 6 eggs beaten
- 1 tbsp olive oil
- 2 green onions chopped
- soy sauce to taste

Directions:
Heat the oil in a skillet to medium heat.  Pour the beaten eggs into the skillet and cook through.  When the eggs are almost done, add the shrimp and onions.  Flip half the egg over to form an omelet and place onto a plate to serve.  Sprinkle some soy sauce on top to serve.

Deep Fried Battered Cod

Ingredients:
- 2 cod fillets
- 1 egg beaten
- 2 cups all purpose flour
- 2 cups vegetable oil
- 1 tsp salt
- 1 tsp pepper
- 1 tsp paprika

Directions:
Heat the oil in a saucepan.  Mix together the flour, salt, pepper and paprika.  Dip the cod fillets into the beaten egg and dredge them into the flour mixture.  Place the cod fillets into the heated oil and fry for 3-5 minutes or until golden.
