Deep Fried Battered Cod

Ingredients:
- 2 cod fillets
- 1 egg beaten
- 2 cups all purpose flour
- 2 cups vegetable oil
- 1 tsp salt
- 1 tsp pepper
- 1 tsp paprika

Directions:
Heat the oil in a saucepan.  Mix together the flour, salt, pepper and paprika.  Dip the cod fillets into the beaten egg and dredge them into the flour mixture.  Place the cod fillets into the heated oil and fry for 3-5 minutes or until golden.

Cod Patties

Ingredients:
- 4 cod fillets shredded
- 2 eggs
- 1/2 cup chopped celery
- 1/2 cup chopped onion
- 1 cup all purpose flour
- 1 cup crushed saltine crackers
- 1/4 cup olive oil

Directions:
Heat olive oil in skillet and add cod fillets.  In a mixing bowl, combine cod, eggs, celery, onion and crackers.  Make patties with cod mixture, pat with flour and place in heated oil.  Fry until golden.
