Halibut with Bacon

Ingredients:
- 4 Halibut Fillets
- 6 slices bacon
- 1/2 cup leeks
- 1/2 cup mushrooms
- 1 cup white wine

Directions:
In a large skillet, cook bacon until crispy.  Remove bacon and leave grease.  Place leeks and mushrooms into bacon grease and saute until transparent.  Add white wine and reduce to half.  Meanwhile in another skillet, brown halibut fillets until flaky and done.  Place halibut fillets on plate and top with bacon mixture. 

Halibut in Red Wine Reduction

Ingredients:
- 4 halibut fillets
- 2 tbsp olive oil
- 4 cups chopped mushrooms
- 1/2 cup thinly sliced celery
- 1/2 cup thinly sliced onion
- 1/2 cup chopped leeks
- 2 cups red wine
- 1 can chicken broth

Directions:
Heat 1 tbsp olive oil and add halibut fillets.  Cook until golden and flaky.  In another skillet, Heat 1 tbsp olive oil in skillet and saute mushrooms, celery, onion and leeks.  Add red wine and chicken broth and reduce to half.  Place halibut fillets on plate and pour wine sauce over top to serve.   

Dill Halibut

Ingredients:
- 2 Halibut fillets
- 2 tbsp butter
- 2 tsp dill
- 1 tsp salt
- 1 tsp pepper
- 1 tsp garlic powder

Directions:
Preheat oven to 350 degrees.  Place halibut in baking dish and place 1 tbsp butter, 1 tsp dill, salt, pepper and garlic powder on top of each fillet.  Place halibut in oven and bake for 10-15 minutes or until flaky.  Serve immediately with steamed veggies.
