Broiled Parmesan Scallops

Ingredients:
- 1 pound fresh scallops
- 2 tbsp butter softened
- 1/4 Parmesan cheese
- salt and pepper to taste
- 1 tsp paprika
- 1 tsp garlic powder

Directions:
Preheat the oven to broil.  In a small bowl, combine the butter, Parmesan cheese, salt, pepper, paprika and garlic powder. Place each scallop on a baking dish and smear each scallop with the butter mixture.  Broil the scallops for 2-4 minutes on each side, spreading the butter mixture on top after each turn.

Parmesan Scallops

Ingredients:
- 12 large scallops
- 1/4 cup cream cheese
- 4 tbsp lemon juice
- 1/4 cup frozen spinach
- 1/4 mozzarella cheese
- 1/2 cup parmesan cheese
- 1 clove garlic minced
- 1 tsp parsley
- salt and pepper to taste

Directions:
Preheat oven to 400 degrees.  In a bowl, mix cream cheese, spinach and garlic until smooth.  Place scallops in a large baking dish and drizzle with lemon juice. Spoon cream cheese mixture onto each scallop.  Sprinkle mozzarella cheese then parmesan cheese on top and bake for 15-20 minutes or until crispy on top.
