Seafood Stuffed Green Pepper
Ingredients:
- 12 shrimp
- 6 large scallops
- 2 large green peppers halved
- 1 small onion chopped
- 1/2 cup celery
- 1 tbsp butter
- 1/2 cup bread crumbs
- salt and pepper to taste
Directions:
Preheat oven to 350 degrees. In a skillet, melt butter and saute celery and onion. In same skillet add scallops and shrimp and cook until done. In a mixing bowl, combine shrimp, scallop, onion, celery and bread crumbs. Fill green pepper half with shrimp and scallop mixture and bake for 10-15 minutes.
Seafood Kabob
Ingredients:
- 12 large scallops
- 12 shrimp
- 2 green pepper chopped to 1 square inch
- 1 large onion chopped to 1 square inch
- 12 mushrooms
- 12 baby tomatoes
- Salt and pepper to taste
Directions:
Preheat grill to medium heat. On wooden skewers and alternating, put on green pepper, baby tomato, mushroom, shrimp, scallop and onion. Continue to place ingredients on skewer until there is no more room. Salt and pepper to taste. Place on grill and cook for 10-12 minutes or until scallops are done.
Halibut and Almonds
Ingredients:
- 2 Halibut Filets
- 1/4 cup flour
- 1/4 cup slivered almonds
- 1 tsp dill
- 1 tbsp lemon juice
- 1 tbsp butter
- Salt and pepper to taste
Directions:
Heat butter in a skillet. Cover halibut filets with flour and cook in butter for 2 minutes per side until flaky. In another skillet heat butter and add almonds, dill and lemon juice. Pour almond mixture over halibut and serve immediately.
