Halibut in Red Wine Reduction

Ingredients:
- 4 halibut fillets
- 2 tbsp olive oil
- 4 cups chopped mushrooms
- 1/2 cup thinly sliced celery
- 1/2 cup thinly sliced onion
- 1/2 cup chopped leeks
- 2 cups red wine
- 1 can chicken broth
Directions:
Heat 1 tbsp olive oil and add halibut fillets. Cook until golden and flaky. In another skillet, Heat 1 tbsp olive oil in skillet and saute mushrooms, celery, onion and leeks. Add red wine and chicken broth and reduce to half. Place halibut fillets on plate and pour wine sauce over top to serve.
